Every cut passes through our hands before reaching the counter. Breeds, farms and masserie are assessed personally, one by one.

A technique handed down from father to son. The cut respects the grain, enhances texture and prepares the meat for the fire or home cooking.

Time makes the difference

Dedicated rooms, controlled temperature, patience. We age to achieve tenderness and depth of flavour — never for fashion.
